Cimicky

The Cimicky Estate has been built on land with a history that dates back to the early 1900’s. The twin titled land used for fruit growing and possibly Dairy Farming under the name of LYNDOCH FARMER and also HUNDRED of BAROSSA, with esteemed owners such as Percival Norman Burge and Leslie Norman Ward.

The land was first purchased by Karl Cimicky in the early 1970’s. Karl vision for the land was to establish a world renowned Barossan winery. Charles Cimicky, after having learned the trade took over the business from his father and subsequently changed the name from KARLSBERG WINES to K. CIMICKY and SON and later to CHARLES CIMICKY.

Charles and his wife Jennie set about building an estate house next to the winery and shortly after lived their lives in Barossa while Charles lived out his passion for premium quality wines and gardening.

In 1995 the Cimicky Estate Sauvignon Blanc Vintage 1994 was chosen to be served at Buckingham Palace for the 50th anniversary of the end of WWII. Paired with ‘Clarisse de Ouffs Princess’ Quail Egg Salad.

Charles reputation for producing premium quality wines became renowned as did the awards and trophies.

A rich, meaty, classic Barossa Shiraz! This wine shows lovely pallet density with restrained elegance running through the core. Well structured to enjoy now for its power, or mature for ten or more years for aromatic complexity to build over time.

Regular warm sunny days, with nights that are surprisingly cool for the uninitiated, ensure this moderate climate variety can ripen fully without losing too much natural acidity. Barossa Cabernet wines generally show less aromatic intensity than their peers from cooler regions, however, they compensate by their rich and generous palate depth. Shiraz grapes can also ripen fully here without losing too much of their natural acidity.

Tasting Notes

Our Autograph wines represent the best of their variety that we produce each year. Featuring a dominant percentage of Cabernet Sauvignon (83%), this wine shows the fresh blackcurrant aromas typical of that variety, complemented by the dark plummy and slightly spicy fruit characters of ripe Shiraz. Coupled with 18 months maturation in French and American oak barrels, the raw fruit profile is tamed into a harmonious whole, benefiting from a cleansing acidic finish with a light tannin grip.

Tasting Notes

This is the first release of an Eden Valley Shiraz for Cimicky. The higher and cooler subregion of the Barossa produces wines of great style and elegance whilst still carrying the hallmark generosity and intensity of the broader Barossa region. The wine has a vibrant medium to full crimson, colour with aromas if dark cherry, blueberry, black pepper and sage with nuances of cedar oak from ageing in French oak Barrel for 17 months. On the palate wild berries seamlessly integrate with complex dried herbs and violets with very fine complex dried herbs and violets with very fine tannins and great length of flavour. Our 2019 Eden Valley Shiraz will warmly reward those with patience to cellar the wine through 2040.
